- 1 cup rice
- Handful Chana daal (split peas)
- Handful Urad daal
- 2-3 dried red chilis
- 2 tsp oil (canola or sunflower)
- 2 cloves garlic, minced
- 2-3 green chilis, chopped
- Handful cashews
- 5-6 curry leaves
- 1 cup shredded coconut
- Salt, to taste.
Steps:
- Cook rice.
- In a medium pan, heat oil over medium heat.
- When hot, add chana and urad daals, and red chili. Cook and stir until the daals have browned just a bit, about 2-3 minutes.
- Add garlic and green chilis and stir a minute. Add cashews and stir occasionally for another minute.
- Add curry leaves and cook for about 30 seconds.
- Add shredded coconut and continuously stir for a couple minutes. The coconut should start browning and become golden brown.
- Add cooked rice to coconut mixture and mix completely.
- Add salt, to taste. Serve.
